I absolutely love love love pasta!  As part of the BGN Healthy Eating Series, my personal challenge is to eat plant based foods and to save tons of money while doing it!  I always like to see what I already have in my pantry before I gather my grocery list of items I need to purchase at the supermarket.  Am I the only one that does a major facepalm to the head when a purchase is made at the grocery for store for an item you already have in your kitchen cabinet or freezer?  The website Plant Based On A Budget makes it very easy for you to use household items that you likely own to make healthy dishes whilst saving every penny!

1 box of pasta
1 tbs oil
3 garlic cloves, minced
1/2 yellow onion, diced
1 1/2 cups of broccoli, chopped
15 oz can of tomato sauce
Italian spices of your choice (I chose: 1 tbs oregano, 1/2 tbs parsley, 1/2 tbs basil)

Step 1

Cook pasta following box instructions.

Step 2

Saute onions and garlic in oil, add broccoli and cook for 2-3 minutes. Add sauce, spices and pasta and mix thoroughly.
